- 1 x 250g pack fine egg noodles or Blue Dragon Thick Rice Noodles
- 1 onion, thinly sliced
- 1 clove of garlic, sliced
- 1 tbsp vegetable oil
- 2 tbsp Thai red curry paste

- Cook the noodles according to pack instructions, then drain. Stir fry the onion and garlic in the oil. Add the Thai curry paste, water chesnuts or bamboo shoots, prawns (or cooked shredded meat) and the bean sprouts. Add the noodles and enough boiling water to moisten. Serve topped with roasted peanuts, if wished, and garnish with coriander.
