Rhubarb, cinnamon and brown sugar muffins

These irresistible muffins combine the sweet-tart taste of rhubarb with the spicy flavour of cinnamon
 

Ingredients

  • 300g rhubarb, chopped
  • 3 tbsp golden
  • caster sugar
  • 2 eggs, beaten
  • 200ml milk
  • 100g butter, melted and cooled
  • 300g plain flour
  • 1 tsp baking powder
  • 100g golden caster sugar
  • 1 tsp cinnamon
  • Demerara sugar, to decorate

Directions

  1. Preheat the oven to /fan /Gas Line a -hole muffin tin with paper cases. Mix the rhubarb with tbsp of sugar. Bake for minutes. Drain and cool.
  2. Mix the eggs, milk and butter. Then combine the flour with the baking powder, sugar and cinnamon. Stir the wet ingredients into the dry with the rhubarb - the mixture should be a bit lumpy.
  3. Divide between the cases, sprinkle with Demerara sugar and bake for - minutes, until risen and golden.
