- 50g butter
- 1 onion, finely chopped
- 600ml chicken stock
- 1 glass ruby port
- 2 tsp mustard powder
- 1 tsp dried sage
- 1/2 tsp cayenne pepper

- Melt the butter in a saucepan and cook the onion over medium heat until lightly browned. Stir in the rest of the ingredients and simmer, covered for - minutes. Add juices (not fat) from the roast if wished.
