Ricotta Cheese Pudding

This pudding is traditionally made using requeijao, a whey cheese, but ricotta cheese works just as well.The pudding is flavoured with cinnamon, Portugal's favourite spice.
Ingredients
- butter for greasing
- 125g ricotta cheese
- 200g caster sugar
- 75g ground almonds
- 3 large eggs
- 1 tsp ground cinnamon
- icing sugar to dust
- fresh fruit and sweet port, to serve

- Preheat the oven to //gas mark Butter an cm/n cake tin and line with buttered greaseproof paper.
- Place the ricotta cheese in a bowl with the sugar and almonds and mash together with a fork, adding the eggs one by one. Add the cinnamon and beat the mixture really well you could use an electric mixer for this until smooth.
- Pour the mixture into the prepared tin and bake in the centre of the oven for - minutes until golden and firm. Leave in the tin for minutes, then turn out and leave to go cold.
- When cold, dust with a little icing sugar and divide it into portions. Serve with fresh fruit and a glass of sweet port.
