Roast sea bream with pesto and lime crumb crust

Sea bream is an absolutely delicious fish. Topped with crisp pesto soaked crumbs, it makes an easy and impressive main course as a treat for two, midweek, or a dinner party at the weekend.
Ingredients
- 1 scaled and cleaned sea bream weighing around 500g (1 lb 2 oz)
- Juice 1/2 lime
- 1 tbsp green pesto
- Extra olive oil for greasing
- Salt and pepper
- For the crust:
- 1 tbsp green pesto
- 15g (1/2 oz) dry breadcrumbs
- Finely grated zest 1/2 lime

- Preheat the oven to //Gas Squeeze lime juice over the fish and season with salt and pepper. Rub into the skin and into the inner cavity. Squeeze half the pesto into the cavity of the fish, then lay in a lightly oiled shallow ovenproof dish. Roast for minutes.
- Mix all the ingredients for the crust with your fingers making sure that all the crumbs are soaked with pesto. Take the fish out of the oven, carefully turn over, then spread the crumbs over the upper surface patting them into place.
- Return to the oven for minutes until the crumbs are golden brown. Test with a skewer and if the fish is not quite cooked through, cover loosely with foil and return to the oven for a further minutes.
- Serve with lime wedges
