Rump Steaks with Stilton and Walnut Sauce

- 1 tbsp vegetable oil
- 2 rump steaks
- 12g butter
- 2 spring onions, finely chopped
- 25g Stilton, crumbled
- 12g walnuts, chopped
- 6 tbsp whipping cream
- pinch each of salt and ground black pepper
- new potatoes, leeks and asparagus, to serve

- Heat the oil in a frying pan over a medium heat. Fry the steaks for between # and minutes on each side, turning once. Remove from the pan and keep warm.
- For the sauce, melt the butter in a saucepan over a medium heat. Add the spring onions and fry for minute. Add the Stilton and walnuts and stir continuously until the cheese has melted. Remove the pan from the heat and add the cream. Return to the hob on a low heat for minutes, and allow the sauce to thicken slowly.
- Season to taste and pour over the steaks. Serve with new potatoes, leeks and asparagus spears.
