Salmon with Mushroom Salsa

- 4 salmon steaks
- 4 tsp clear honey
For the salsa:
- 200g pack of button mushrooms, chopped very finely
- 2?3 green chilli peppers, de-seeded and chopped very finely
- 1 red pepper, de-seeded and chopped finely
- 4 large spring onions, chopped very finely
- grated rind and juice of 1 lemon
For the sauteed mushrooms:
- 675g closed cup mushrooms, fluted
- 25g butter
- 1 tbsp sunflower oil
Tip: To 'flute' mushrooms, make a series of curved cuts from the top of each mushroom cap to the base, then remove a narrow strip of skin along each cut.

- Preheat the grill. Brush the salmon steaks with honey, then grill for to minutes, turning the steaks over once halfway through the cooking.
- Meanwhile, mix all the ingredients together for the salsa in a bowl or put them in a food processor and blend until finely chopped.
- Lightly saute the fluted mushrooms in the butter and sunflower oil.
- Serve the salmon with the salsa and sauteed mushrooms.
