Sardines are an excellent source of omega-3s, which provide a whole range of health benefits, including boosting brainpower and protecting against some cancers. This easy recipe can be a main or a starter
 

Ingredients

  • 2 120g tins of sardines in tomato sauce
  • 1 400g tin chopped peeled plum tomatoes, drained
  • 2 farmhouse-style bread rolls
  • 2 cloves crushed garlic
  • 1 finely chopped red onion
  • Large handful finely chopped fresh basil
  • 1 tbsp olive oil
Serves: 4       whats this
 

Directions

  1. Place the plum tomatoes, red onion, garlic, basil and olive oil in a large bowl, mix thoroughly and season with salt and pepper.
  2. Cut the rolls in half and place in a hot oven at 180C/350F/gas mark 4 for 5 or so minutes.
  3. Remove the rolls from the oven and spoon the mixture over the top of each roll.
  4. Place the sardine few minutes. Serve warm.
