Sausage and Apples with Creamy Cider Sauce

- 450g good-quality pork and apple sausages
- 3 tbsp vegetable oil
- 1 small onion, thinly sliced
- 1 clove garlic, crushed
- 2 red apples, cored and sliced
- 1 tsp freshly chopped thyme
- 200ml medium-sweet cider
- 1 tbsp cornflour
- 150ml creme fraiche
- pinch each of salt and ground black pepper
- baked potatoes and steamed courgettes, to serve

- Fry the sausages in tbsp oil in a large frying pan, following the instructions on the pack. Remove from the pan and put to one side.
- Add the remaining oil to the pan and gently fry the onion and garlic for minutes. Add the apples, thyme and cooked sausages to the pan. Pour in the cider and bring to the boil. Cover and simmer for minutes.
- Blend the cornflour with the creme fraiche and stir into the pan. Season to taste and continue to simmer, uncovered for a further minutes. Serve immediately with baked potatoes and steamed courgettes.
