Sausage with Red Wine Pasta Sauce

The better the wine, the better the sauce – so don't skimp when you're cooking.
 

Ingredients

  • 2 tbsp vegetable oil

  • 1 medium onion
  • 225g tradtionally made pork and herb sausages
  • 2 tsp fennel seeds
  • 200g chopped tomatoes
  • 150ml red wine
  • pasta, to serve

Directions

  1. Heat the oil in a pan. Saut&# the finely chopped onion for about minutes until softened.
  2. Skin the sausages and break them into small pieces. Add them to the pan, using a fork to break the pieces up.
  3. Add the fennel seeds and continue cooking over a medium heat for minutes until the meat is browned.
  4. Add the tomatoes and red wine. Bring to the boil and then cover and simmer for minutes. Serve with freshly cooked pasta bows.
