Sausage with Red Wine Pasta Sauce

The better the wine, the better the sauce so don't skimp when you're cooking.
Ingredients
2 tbsp vegetable oil
- 1 medium onion
- 225g tradtionally made pork and herb sausages
- 2 tsp fennel seeds
- 200g chopped tomatoes
- 150ml red wine
- pasta, to serve

- Heat the oil in a pan. Saut the finely chopped onion for about minutes until softened.
- Skin the sausages and break them into small pieces. Add them to the pan, using a fork to break the pieces up.
- Add the fennel seeds and continue cooking over a medium heat for minutes until the meat is browned.
- Add the tomatoes and red wine. Bring to the boil and then cover and simmer for minutes. Serve with freshly cooked pasta bows.
