I am using the much under-rated and under-used trout here. Supremely delicate and very cheap, it’s perfect for a quick dinner or lunch as it cooks so quickly and is very light. I like serving it with guacamole as it's delicious and filling, and those avocados are very good for you too, with 20 vitamins and minerals, plus they help you to absorb fat soluble nutrients. They are higher in fat but that’s fat that’s actually good for you, plus with the fish on the side, it’s not like you need to worry about this dish being too fatty.
I love this quick lentil and chickpea soup. It tastes even better the next day, so make extra and eat it for lunch. None of the ingredients are expensive and it won’t take more than a half an hour to make. It’s vegetarian but has so much flavour and texture that you expect it not to be.
