Smoked Mackerel Pate

This is easily made in advance and makes a great starter or spread for a buffet table.
Ingredients
- 2 smoked mackerel fillets, skinned
- 3 1/2fl oz (100 mls) soured cream
- 3 1/2oz (100g) cottage cheese
- juice of half a lemon
- salt and pepper
- wholemeal or savoury biscuits, to serve

- Make sure all the small bones and skin are removed from the mackerel fillets.
- Flake the fish and place in the bowl of a food processor with the soured cream, cottage cheese and lemon juice. Blend until completely smooth and taste for seasoning, remembering smoked fish can be quite salty.
