Smoked Tuna and warm Pasta Salad

1 small clove garlic, halved
- 115g washed-and-ready-to-eat baby spinach, shredded
- 4 large plum tomatoes, deseeded and chopped
- 400g flageolet beans, drained and rinsed under cold running water
- 250g fresh tricolore tagliolini
- 1 lime
- 1 ripe avocado
- 2 tbsp balsamic vinegar
- 250g smoked tuna slices
- salt and freshly ground black pepper to taste

- Bring a large pan of salted water to the boil for the pasta.
- Meanwhile, rub the cut surfaces of the garlic around a large salad bowl. Turn the baby spinach into the bowl with the tomatoes and flageolet beans.
- Add the pasta to the boiling water, and return to the boil for minutes.
- Pare the zest from the lime and set aside. Squeeze the lime juice into a bowl. Peel, stone and chop the avocado, toss the flesh in the lime juice, drain, then add to the salad. Reserve the juice.
- Drain the pasta in a colander. Pour the reserved lime juice into the pasta pan together with the balsamic vinegar and oil from the smoked tuna.
- Add one can of tuna to the salad, season and toss lightly. Bring the dressing to the boil, season well, then add the pasta. Stir until coated with the dressing.
- Add the pasta to the salad, toss lightly, top with the remaining tuna slices and garnish with the lime zest. Serve immediately.
