- 3 large eggs
- 1 large knob butter
- 25g grated cheddar
- 25g baby spinach leaves
- 40g shredded cooked ham or bacon
- pinch salt and freshly ground pepper

- Whisk eggs well and season. Heat butter in an cm/n non-stick omelette pan until it stops foaming. Add the eggs and cook over medium heat. Use a fork to bring the cooked mixture into the centre of the pan allowing the liquid egg to flow to the edges.
- Keep doing this until the mixture is thoroughly cooked and the egg is just set. Slide on to a plate and take to the table. Arrange fillings on the table in bowls, and put your own omelettes together by placing fillings on one side of the omelette and folding gently in half.
