Spiced lentil soup

This mildly spiced soup is perfect for chilly evenings. Reheat leftovers for lunch the next day.
 

Ingredients

  • 1 1/2 tbsp oil
  • A medium-sized piece of ginger, peeled and grated
  • 1 1/2 tsp cumin seeds
  • A large pinch of chilli flakes
  • 1 large onion, finely chopped
  • 3 large carrots, peeled and grated
  • 225g red lentils
  • 11/2ltr fresh vegetable stock (or made from cube or concentrate)
  • 1 large lime, juiced to taste
  • 1 bunch of fresh coriander, roughly chopped
Serves: 6 Preparation: 30   Total Time: 30min whats this
 

Directions

  1. Heat the oil in a large pan and fry the ginger and spices for a couple of minutes.
  2. Add the vegetables and cook for five minutes, then add the lentils and stock. Bring to the boil and simmer for minutes, stirring occasionally until the lentils are tender.
  3. Blend until smooth or leave chunky. Stir through a squeeze of lime juice and serve sprinkled with coriander.
