Spiced lentil soup

This mildly spiced soup is perfect for chilly evenings. Reheat leftovers for lunch the next day.
Ingredients
- 1 1/2 tbsp oil
- A medium-sized piece of ginger, peeled and grated
- 1 1/2 tsp cumin seeds
- A large pinch of chilli flakes
- 1 large onion, finely chopped
- 3 large carrots, peeled and grated
- 225g red lentils
- 11/2ltr fresh vegetable stock (or made from cube or concentrate)
- 1 large lime, juiced to taste
- 1 bunch of fresh coriander, roughly chopped

- Heat the oil in a large pan and fry the ginger and spices for a couple of minutes.
- Add the vegetables and cook for five minutes, then add the lentils and stock. Bring to the boil and simmer for minutes, stirring occasionally until the lentils are tender.
- Blend until smooth or leave chunky. Stir through a squeeze of lime juice and serve sprinkled with coriander.
