Spiced pork patties

These are a perfect thing to keep in your fridge or freezer for emergencies or when you have no time. They take very little time to put together. I use fresh spices here as they really benefit from the extra punch. Substitute with half the amount of ground spices if you would prefer to use them. I like to have these in pitta bread with some salad.
 

Ingredients

  • 800g best pork mince
  • 1 tbsp cumin seed
  • 1 tbsp coriander seed
  • A handful of chopped flat leaf parsley
  • 1 red chilli, deseeded and finely chopped
  • Zest of one unwaxed lemon
  • 1 tsp sea salt & some black pepper to taste

Directions

  1. Toast the cumin and coriander seeds (if using) over a high heat for a minute or so, until they start to pop, and grind in a pestle and mortar or spice grinder.
  2. Combine all ingredients and test the seasoning by frying a small amount and tasting. When you are happy, shape into 8 x 100g round patties.
  3. Now you can freeze or refrigerate. If eating now, fry for approx 5 minutes on each side on a medium-high heat, turning frequently so they don’t burn. You will know they are cooked through as they will become less spongy. You can always cut on through to ensure they are not pink (it is important never to eat pork pink).
  4. Eat warm with salad and or pitta bread.
