Spicy Beef Stir-Fry

- 500g beef steak mince
- 1 tsp sesame oil
- 1 tsp cornflour
- 2 tbsp light soy sauce
- 2 tbsp peanut oil
- 2.5 cm piece fresh root ginger, peeled and finely chopped
- 2 garlic cloves, finely chopped
- 1 red chilli, deseeded and finely chopped
- 1 onion, finely chopped
- 1 red pepper, cut into chunks
- 1 yellow pepper, cut into chunks
- 100ml beef stock
- 1 tbsp sherry
- 2 tbsp hoisin sauce
- pinch ground black pepper
- chilli oil, to serve (optional)
- noodles, to serve

- Mix the mince with the sesame oil, cornflour and tbsp soy sauce. Heat a large wok until smoking. Add 1 tbsp peanut oil and when smoking, add the mince mixture and stir-fry for 2-4 minutes, stirring until the mince is brown and quite grainy. Transfer to a plate.
- Wipe the wok clean and heat the rest of the oil. Add the ginger, garlic, chilli and onion; stir-fry for 1 minute before adding the peppers and stir-frying them for 1 minute.
- Add the stock, sherry, remaining soy and hoisin sauces. Season, cook for minute then add the mince to the pan and cook for 2 minutes. Add chilli oil for extra heat and serve with noodles.
