Spicy Lime and Coriander Paste

A delicious topping for grilled chicken or fish
 

Ingredients

  • 2 cloves garlic
  • 1 tsp sea salt
  • 1 small piece of root ginger, grated
  • grated zest and juice of 1 lime
  • ¼ tsp ground cinnamon
  • ¼ tsp ground cumin
  • a good handful of fresh coriander, chopped
  • 4–5 tbsp light olive oil
Preparation: 20   Total Time: 20min whats this
 

Directions

  1. Place everything but the oil in the bowl of a food processor and whiz to a paste.
  2. With the motor running, add the olive oil to make a smooth but not too thin sauce.
  3. Store in a jar in the fridge (can also be frozen) and use to spread on fish or chicken breasts before grilling.
