Spicy Lime and Coriander Paste

A delicious topping for grilled chicken or fish
Ingredients
- 2 cloves garlic
- 1 tsp sea salt
- 1 small piece of root ginger, grated
- grated zest and juice of 1 lime
- ¼ tsp ground cinnamon
- ¼ tsp ground cumin
- a good handful of fresh coriander, chopped
- 45 tbsp light olive oil
Directions

- Place everything but the oil in the bowl of a food processor and whiz to a paste.
- With the motor running, add the olive oil to make a smooth but not too thin sauce.
- Store in a jar in the fridge (can also be frozen) and use to spread on fish or chicken breasts before grilling.
