Spicy noodles

This mild curried dish makes enough for one portion, but is easily doubled
 

Ingredients

  • 2 tsp Thai curry paste
  • 3 spring onions, chopped
  • 1 large carrot, grated
  • 1 mugful of vegetable or chicken stock
  • handful frozen peas
  • 150g straight-to-wok noodles
Serves: 1       whats this
 

Directions

  1. FRY THE VEG
  2. Add the curry paste to a pan and fry over a medium heat for minutes. Stir in the spring onions and grated carrot, then cook for minute.
  3. ADD THE STOCK
  4. Pour in the stock and frozen peas. Bring to the boil, then simmer for minutes until the carrot is just cooked.
  5. COOK THE NOODLES
