This mild curried dish makes enough for one portion, but is easily doubled
Ingredients
- 2 tsp Thai curry paste
- 3 spring onions, chopped
- 1 large carrot, grated
- 1 mugful of vegetable or chicken stock
- handful frozen peas
- 150g straight-to-wok noodles

- FRY THE VEG
- Add the curry paste to a pan and fry over a medium heat for minutes. Stir in the spring onions and grated carrot, then cook for minute.
- ADD THE STOCK
- Pour in the stock and frozen peas. Bring to the boil, then simmer for minutes until the carrot is just cooked.
- COOK THE NOODLES
