Spicy Potato Patties

- 450g potatoes, peeled
- ½ tsp salt
- 2 tbsp wholemeal flour
- 1 tbsp vegetable oil or butter
- 1 large chilli, deseeded and finely chopped
- 2 tbsp desiccated coconut
- bunch fresh coriander, chopped
- ½ tsp each paprika and turmeric
- 1 tbsp lemon juice
- 1-2 tbsp semolina
- oil, for shallow-frying
- mango chutney, to serve

- Chop the potatoes to roughly the same size, and boil for 15 minutes until just tender. Drain thoroughly, mash and stir in the salt and flour. Leave to cool.
- Heat the vegetable oil or butter in a small frying pan, and fry the chilli, coconut, coriander and spices for 5-10 minutes, stirring all the time. Remove from the heat and stir in the lemon juice.
- Shape the potato mixture into balls, make a dip in each and place a little spice mixture in the dip. Enclose the potato around it and then flatten each one into a small 'cake'. Coat the potato patties in semolina.
- Shallow-fry in batches for a couple of minutes on each side, or until crisp and golden. Drain on kitchen paper and serve warm or cold with mango chutney.
