Spicy Roast Potatoes and Carrots

Roast potatoes and carrots with a difference! Ginger and paprika add heat and an intriguing flavour to everyday veg.
 

Ingredients

  • 750g baby new potatoes, cut into even-sized chunks
  • 750g carrots, peeled and cut into similar-sized chunks as the potatoes
  • 3 tbsp vegetable oil
  • 2 tsp ground ginger
  • 2 tsp paprika
  • 1 tsp salt
Serves: 4 Preparation: 10 Cook Time: 60 Total Time: 70min whats this
 

Directions

  1. Place all the ingredients in a roasting tin and toss together well.
  2. Just before cooking, set the tin over the hob and heat until the oil sizzles. Transfer to the top of the preheated oven at 200C/400F/gas mark 6 and roast for 1 hour, checking vegetables and turning them halfway through cooking.
