Spicy Roast Potatoes and Carrots

Roast potatoes and carrots with a difference! Ginger and paprika add heat and an intriguing flavour to everyday veg.
Ingredients
- 750g baby new potatoes, cut into even-sized chunks
- 750g carrots, peeled and cut into similar-sized chunks as the potatoes
- 3 tbsp vegetable oil
- 2 tsp ground ginger
- 2 tsp paprika
- 1 tsp salt

- Place all the ingredients in a roasting tin and toss together well.
- Just before cooking, set the tin over the hob and heat until the oil sizzles. Transfer to the top of the preheated oven at 200C/400F/gas mark 6 and roast for 1 hour, checking vegetables and turning them halfway through cooking.
