A delicious recipe for spinach and nutmeg muffins
Ingredients
- 150g self raising flour
- 150g plain flour
- 2 teaspoons baking powder
- 150g mature cheddar
- 1/2 teaspoon salt
- 1/2 teaspoon cracked black pepper
- 2 eggs
- 250ml milk
- 150g cooked and chopped spinach
- ½ nutmeg freshly grated
- 3 chopped spring onion
Directions

- Preheat the oven to 180°c. Sieve flour and baking powder on to the cheese with the salt and pepper.
- In a separate bowl, beat the eggs and the milk together and add to the flour and cheese and fold together.
- Now add the spinach, spring onions and nutmeg.
- Place into muffin or cup cake tray and bake for 20 minutes.
