A delicious recipe for spinach and nutmeg muffins
 

Ingredients

  • 150g self raising flour
  • 150g plain flour
  • 2 teaspoons baking powder
  • 150g mature cheddar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 2 eggs
  • 250ml milk
  • 150g cooked and chopped spinach
  • ½ nutmeg freshly grated
  • 3 chopped spring onion
Serves: 8       whats this
 

Directions

  1. Preheat the oven to 180°c. Sieve flour and baking powder on to the cheese with the salt and pepper.
  2. In a separate bowl, beat the eggs and the milk together and add to the flour and cheese and fold together.
  3. Now add the spinach, spring onions and nutmeg.
  4. Place into muffin or cup cake tray and bake for 20 minutes.
