Spinach with Fried Garlic

- 1 1/2 tbsp groundnut (peanut) oil
- 1/2 tsp salt
- 2 tbsp finely sliced garlic
- 3 x 225g packs washed-and-ready-to-eat baby spinach
- 1 tsp sugar

- Heat a wok or large frying pan over a high heat until it is hot. Add the oil and reduce the heat to moderate. Add the salt and garlic and stir-fry until the garlic is golden and crisp. Remove with a slotted spoon and drain on kitchen paper.
- Add the spinach a pack at a time until wilted to of its original size. Stir-fry for about minutes to coat the spinach leaves thoroughly with the oil and salt. Add the sugar and continue to stir-fry for another minutes. Drain and transfer spinach to a plate. Sprinkle with the fried garlic. This dish tastes equally good hot or cold.
