Here's a great accompaniment for your traditional Christmas feast. The combination of a little bacon, some sweet nutty pistachios, fragrant shallots and plenty of black pepper really brings out the best in sprouts
Ingredients
- 5 shallots, finely diced
- 5 rashers unsmoked streaky bacon, fine chopped
- 1 tbsp olive oil
- 1kg/2 lb 3 oz prepared fresh sprouts
- 70g/2 1/2 oz shelled unsalted California pistachios

- Sauté the shallots with the bacon in the oil, until the shallot is soft and the bacon crispy.
- Meanwhile, boil the sprouts for about five minutes, until just tender.
- Stir the pistachios into the shallot and bacon mixture and season.
