Sprouts with California pistachios, shallots and bacon

Here's a great accompaniment for your traditional Christmas feast. The combination of a little bacon, some sweet nutty pistachios, fragrant shallots and plenty of black pepper really brings out the best in sprouts
 

Ingredients

  • 5 shallots, finely diced
  • 5 rashers unsmoked streaky bacon, fine chopped
  • 1 tbsp olive oil
  • 1kg/2 lb 3 oz prepared fresh sprouts
  • 70g/2 1/2 oz shelled unsalted California pistachios
Serves: 8 Preparation: 10 Cook Time: 5 Total Time: 15min whats this
 

Directions

  1. Sauté the shallots with the bacon in the oil, until the shallot is soft and the bacon crispy.
  2. Meanwhile, boil the sprouts for about five minutes, until just tender.
  3. Stir the pistachios into the shallot and bacon mixture and season.
