Sri Lankan potato and coconut curry

Ingredients
- Potatoes (small), 6
- Coconut, 1
- Garlic, 2 cloves
- Green chilli, 1
- Mixed herbs
- Onion, 1
- Curry powder, half teaspoon
- Yellow powder, half teaspoon
- Chilli powder, half teaspoon
- Ground cardamom, half teaspoon
- Salt and pepper

- Par boil potatoes
- Roughly chop the onion and herbs. Finely chop the garlic and chilli.
- Grate the coconut, mix with water (part coconut, parts water) and strain, repeat once more to make the coconut milk. (alternatively can use canned coconut milk)
- Chop potatoes into quarters, and add to a large pan with onions, herbs, garlic and chilli.
- Add spices, salt and pepper and boil for minutes.
- Reduce the heat and simmer for minutes, stirring regularly
