Sri Lankan potato and coconut curry

This couldn't be simpler, serve as a main dish with rice, or as a smaller side dish. See also Sri Lankan Coconut Sambal
 

Ingredients

  • Potatoes (small), 6
  • Coconut, 1
  • Garlic, 2 cloves
  • Green chilli, 1
  • Mixed herbs
  • Onion, 1
  • Curry powder, half teaspoon
  • Yellow powder, half teaspoon
  • Chilli powder, half teaspoon
  • Ground cardamom, half teaspoon
  • Salt and pepper

Directions

  1. Par boil potatoes
  2. Roughly chop the onion and herbs. Finely chop the garlic and chilli.
  3. Grate the coconut, mix with water (part coconut, parts water) and strain, repeat once more to make the coconut milk. (alternatively can use canned coconut milk)
  4. Chop potatoes into quarters, and add to a large pan with onions, herbs, garlic and chilli.
  5. Add spices, salt and pepper and boil for minutes.
  6. Reduce the heat and simmer for minutes, stirring regularly
