Steak sandwich with balsamic shallots

Ingredients

  • 350g (12oz) sirloin steak
  • 2 vine-ripened tomatoes
  • 3 tbsp olive oil
  • 8 shallots, finely sliced
  • 2 cloves garlic, finely chopped

Directions

  1. Slice the steak into four pieces. Place each one between two sheets of of cling film and beat until m (n) thick. Slice the tomatoes into six.

  2. Heat a large, heavy-based pan until smoking hot. Add half the oil. Fry the tomatoes on both sides for mins. Remove, season the meat before frying for min on each side.

  3. Take the steaks out of the pan and keep warm with the tomatoes.

  4. Pour the remaining oil into the pan and add the shallots and garlic. Sauté until soft, then add the balsamic vinegar and thyme. Cook until the vinegar has all been absorbed by the shallots.
