Ingredients

  • 8 skinless and boneless chicken breast fillets
  • 1 tbsp vegetable oil
  • 150g orange marmalade
  • 50g Dijon mustard
  • 2 tbsp Worcestershire sauce
  • 1 medium onion, finely chopped
  • salt and freshly ground black pepper
  • mini pitta breads, coleslaw or green salad, to serve

Directions

  1. Preheat the oven to //gas mark Cut chicken into quarters. Combine the rest of the ingredients, then coat the chicken in the mixture.
  2. Place in a roasting tin (in a single layer) and cook at the top of the oven for minutes, turning occasionally, until golden.
  3. If there are any juices left in the pan, set the tin over a medium heat on the hob and stir until the mixture is reduced to a syrupy glaze.
  4. Season to taste and serve on a platter, with any extra glaze spooned over, for people to help themselves, or serve in mini pitta breads with coleslaw or shredded green salad.
