Sticky sausages with roasted root vegetables

Ingredients

  • 450g/1 lb pork chipolata sausages
  • 2 medium potatoes, scrubbed and cut into chips
  • 2 medium sweet potatoes, scrubbed and cut into wedges
  • 2 parsnips, peeled and cut into wedges
  • 30ml/2 tbsp olive oil
  • 1 red chilli, deseeded and finely chopped
  • 2 cloves garlic, finely chopped
  • 30ml/2 tbsp brown sugar
  • 30 ml/2 tbsp soy sauce
  • juice and zest of 1 lime
Serves: 4   Cook Time: 40 Total Time: 40min whats this
 

Directions

  1. Spread sausages on a large baking tray.
  2. Place potatoes, sweet potatoes and parsnips on the tray, also spread out in a single layer.
  3. Coat with olive oil, then bake for minutes at //Gas Mark
