Stir-Fried Beef in Oyster Sauce

Ingredients

  • 450g sirolin steak, thinly sliced
  • 1 tbsp plain flour
  • ¼ tsp ground black pepper
  • 2 tbsp light soy sauce
  • 3 tbsp vegetable oil
  • 2 cloves garlic, thinly sliced
  • 175g closed-cup mushrooms, quartered
  • 4 tbsp oyster sauce
  • 1 tsp sugar
  • spring onions and red chillies, thinly sliced, to garnish
  • rice or noodles, to serve

Directions

  1. Combine the steak, flour, pepper and soy sauce; mix well until the meat is evenly coated, then set aside while you prepare everything else. You can cover and refrigerate the meat for up to hours before you prepare the rest of the dish.
  2. Heat the oil in a wok and stir-fry the garlic and mushrooms until lightly golden. Add the beef a handful at a time, stirring all the time over a high heat until the meat is browned and fully cooked.
  3. Stir in the oyster sauce and sugar and warm through. For a thinner sauce add tbsp water.
  4. Serve at once with freshly cooked rice or noodles, garnished with spring onion and red chillies.
