Stir Fried Cucumbers

- 700g cucumbers (approx. 2 small ones)
- 1 tbsp vegetable oil, preferably groundnut
- 2 tsp dark soy sauce
- 1 tbsp dry sherry
- 2 tsp sesame oil
- 2 tsp chilli oil
- 3/4 tsp salt

- Peel the cucumbers, slice them in half lengthways and, using a teaspoon, remove the seeds. Cut into cm/n pieces. Sprinkle them with tsp salt and mix well.
- Put the salted cucumbers into a colander and let them sit for minutes to drain. This rids the cucumbers of any excess liquid. Then rinse them in water and blot them dry with kitchen paper.
- Heat a wok or large frying pan until it is hot. Add the oil and prepared cucumbers and stir-fry for minutes. Then add tsp salt, soy sauce and dry sherry and continue to stir-fry for a further minutes. Add the sesame and chilli oil and give the mixture several good stirs. Serve at once.
