Stir Fried Cucumbers

Ingredients

  • 700g cucumbers (approx. 2 small ones)
  • 1 tbsp vegetable oil, preferably groundnut
  • 2 tsp dark soy sauce
  • 1 tbsp dry sherry
  • 2 tsp sesame oil
  • 2 tsp chilli oil
  • 3/4 tsp salt

Directions

  1. Peel the cucumbers, slice them in half lengthways and, using a teaspoon, remove the seeds. Cut into cm/n pieces. Sprinkle them with &# tsp salt and mix well.
  2. Put the salted cucumbers into a colander and let them sit for minutes to drain. This rids the cucumbers of any excess liquid. Then rinse them in water and blot them dry with kitchen paper.
  3. Heat a wok or large frying pan until it is hot. Add the oil and prepared cucumbers and stir-fry for minutes. Then add &# tsp salt, soy sauce and dry sherry and continue to stir-fry for a further minutes. Add the sesame and chilli oil and give the mixture several good stirs. Serve at once.
