A classic English summer dessert
Ingredients
- 250 g/1/2 lb strawberries
- 250 g/1/2 lb raspberries
- 75 g/3 oz caster or icing sugar
- 600 mls/1 pint whipping or double cream
- 1 tablespoon rosewater, or to taste

- Put the hulled fruit in a bowl, sprinkle on the sugar, and crush with the back of a fork.
- Whip the cream, and stir the rosewater into the fruit. Stir fruit and cream together, and pile into wine glasses or bowls to serve. Decorate with whole berries.
- If you are not going to serve the dessert for some time, keep the fruit and cream separate by spooning the fruit mixture into the glass and piping the whipped cream on top just before serving.
