Irish potatoes baked in their jackets and stuffed with Irish minced beef with tomatoes and peas
Ingredients
- 4 Irish potatoes
- 2 tbsp oil
- 225g/8oz best Irish beef mince
- 1 onion, peeled and finely chopped
- 2 tomatoes, chopped
- 2 tbsp fresh or frozen peas
- salt and freshly ground black pepper

- Bake potatoes in a preheated oven Gas for minutes - or until soft when squeezed.
- At the same time prepare the mince. Heat oil in a large heavy bottomed pan and fry mince to brown. Add onion and cook minutes more, to soften. Add tomatoes and peas and stir. Season with salt and freshly ground black pepper and add thyme leaves
