Stuffed Tomato Antipasti

As an alternative stuffing, try fried pancetta, watercress, artichoke hearts, mozzarella or Parmesan.
Ingredients
- 1 small red onion
- 1 tbsp balsamic vinegar
- 4 beef tomatoes
- 25g rocket
- 12 black olives, stoned and halved
- 8 tbsp sun-dried tomato-flavoured dressing
- 85g Welsh goats' cheese, crumbled

- Soak the onion in the balsamic vinegar with tbsp cold water for minutes. Rinse in cold water and drain well.
- Meanwhile, slice each tomato into horizontally.
- Toss the onion, rocket and olives with tbsp dressing.
- Arrange some between each slice of tomato along with a little of the crumbled goats' cheese.
- When each tomato has been re-formed, drizzle over the remaining dressing.
