Stuffed Tomato Antipasti

As an alternative stuffing, try fried pancetta, watercress, artichoke hearts, mozzarella or Parmesan.
 

Ingredients

  • 1 small red onion
  • 1 tbsp balsamic vinegar
  • 4 beef tomatoes
  • 25g rocket
  • 12 black olives, stoned and halved
  • 8 tbsp sun-dried tomato-flavoured dressing
  • 85g Welsh goats' cheese, crumbled
Serves: 4 Preparation: 20   Total Time: 20min whats this
 

Directions

  1. Soak the onion in the balsamic vinegar with tbsp cold water for minutes. Rinse in cold water and drain well.
  2. Meanwhile, slice each tomato into horizontally.
  3. Toss the onion, rocket and olives with tbsp dressing.
  4. Arrange some between each slice of tomato along with a little of the crumbled goats' cheese.
  5. When each tomato has been re-formed, drizzle over the remaining dressing.
