Sweet-and-Sour Pork with Noodles

- 2 tbsp oil
- 350g pork, diced
- 200g carrot batons
- 1 green pepper, cut into chunks
- 230g canned pineapple chunks in juice
- 1 tbsp cornflour
- 3 tbsp tomato ketchup
- 1 tbsp soy sauce
- 150g medium thread noodles
- 200g beansprouts
- 2 spring onions, chopped
- 1 tbsp sesame oil

- Heat the oil in a wok or frying pan and stir-fry the pork for minutes until it is browned all over.
- Add the carrot batons and the pepper. Fry for minutes, stirring all the time with the wooden spoon.
- Drain the juice from the canned pineapple into a measuring jug and blend in the cornflour to make a paste. Add the tomato ketchup and the soy sauce and mix well.
- Pour into the pan and cook for minutes until the sauce thickens. Meanwhile, bring a pan of water to the boil and cook the noodles for minutes. Add the beansprouts, pineapple and spring onions at the end of the cooking time and cook for seconds. Drain and stir in the sesame oil. Serve with the sweet and sour pork on top.
