- 75g bulghur wheat
- juice of 1 lemon
- 2 tbsp olive oil
- 1 pack fresh mint, chopped
- 1 pack fresh flat-leaf parsley, chopped
- 1 small red onion, finely chopped or 2 spring onions, chopped
- 3 ripe tomatoes, skinned, seeded and chopped
- salt and freshly ground black pepper

- Put the bulghur wheat into a bowl, cover with boiling water and leave to soak for minutes, then drain.
- Add the lemon juice and olive oil, then the remaining ingredients. Season and mix well. Add more lemon juice or olive oil to suit taste.
