Ingredients

  • 75g bulghur wheat
  • juice of 1 lemon
  • 2 tbsp olive oil
  • 1 pack fresh mint, chopped
  • 1 pack fresh flat-leaf parsley, chopped
  • 1 small red onion, finely chopped or 2 spring onions, chopped
  • 3 ripe tomatoes, skinned, seeded and chopped
  • salt and freshly ground black pepper
Serves: 4 Preparation: 15 Cook Time: 30 Total Time: 45min whats this
 

Directions

  1. Put the bulghur wheat into a bowl, cover with boiling water and leave to soak for minutes, then drain.
  2. Add the lemon juice and olive oil, then the remaining ingredients. Season and mix well. Add more lemon juice or olive oil to suit taste.
