Tana Ramsay's lunchbox slices

These slices are a bit of a flapjack replacement - they are a staple for the kids' lunchboxes. For a snack, take them to work or school with a pot of Greek yoghurt and a good crisp apple.
 

Ingredients

  • 1 tsp sunflower oil
  • (for greasing the tray)
  • 150g unsalted butter
  • 3 tbsp golden syrup
  • 75g Demerara sugar
  • 200g Nestle Cheerios
  • (you can also use Oat Cheerios)
  • 25g sunflower seeds
  • 25g pumpkin seeds

Directions

  1. Preheat the oven to /gas mark Grease a shallow cm x cm baking tray with the sunflower oil.
  2. Melt the butter, golden syrup and Demerara sugar in a small saucepan, being careful not to let it brown.
  3. Place the Cheerios in a mixing bowl, then add the melted butter mix and mix well. Stir in the sunflower and pumpkin seeds.
  4. Tip the mixture into the greased baking tray and press down flat. Bake in the oven for approximately minutes. The mixture should be slightly brown at the edges when ready.
  5. Cut into approximately slices whilst still warm and slightly soft and leave to cool on a wire rack.

  7. Try adding nuts as well as seeds for that added crunch - I like to use walnut pieces.
