Terry's Basic Fairy Cakes

This is the chuck it all together; method, as everything goes from food processor to tin to oven. You can lighten the recipe by separating the eggs, whisking the white and folding them separately, but try this simple way first
Ingredients
- 125g self-raising flour
- 125g very soft, unsalted butter
- 125g sugar
- pinch of salt
- 2 medium eggs
- 12 tspn good quality vanilla essence
- ½ tsp baking powder
- 23 tbsp milk

- Preheat the oven to 180C/350F/gas mark 4. Whiz everything except the milk in a food processor until blended. Add the milk slowly, whizzing up until you have a smooth, flowing batter.
- Place the paper cases in a fairy-cake tin with sloping sides and spoon in the batter.
- Bake in the oven for 15-20 minutes, then cool on a rack.
- For a topping, blend together some icing sugar with a little water or lemon juice (and food colouring if desired). Spread over the cooled cakes and top with glace cherries.
