- 450g Lean beef braising steak, cut into cubes
- 15ml (1tbsp) Oil
- 1 Onion, sliced
- 1 Red chilli, deseeded and sliced
- 30 ml (2tbsp) Red Thai paste
- 15 ml (1tbsp) Brown sugar
- 15ml (1tbsp) Tamarind paste
- 2 medium Potatoes, peeled and cut into large chunks
- 400ml can (approx) Coconut milk
- 250ml (1/2pt) Pineapple juice
- 1 small Aubergine, cut into wedges
- 30ml (2tbsp) Peanut butter
- Fresh coriander

- Heat the oil in a large saucepan. Add lean beef braising steak, onion, chilli, cook until meat has browned.
- Add the red Thai curry paste, brown sugar, tamarind paste, potatoes, coconut milk and pineapple juice.
- Cover and cook in a preheated oven for hours.
- Remove from oven and add the peanut butter and aubergine. Cover and return to the oven and cook for minutes or until meat is tender.
- Sprinkle with coriander and sliced chillies.
