Thai Green Curry Salmon Parcel

BBQs don't have to be all about bangers and burgers. Try this simple salmon parcel for a spicy treat
 

Ingredients

  • 4 salmon fillets
  • 1 50g Sharwood's Thai Green Curry Paste
  • 4 Tbsp coconut milk
  • 2 Tbsp chopped coriander for garnish
  • 4 foil 30cm x 60cm

Directions

  1. Fold the foil in half into a square and lightly oil the centre.
  2. Mix together the curry paste and the coconut milk in a bowl.
  3. Coat the salmon fillets in the mixture evenly and place a fillet on the centre of each foil square.
  4. Spoon the remaining mixture over the salmon, fold the edges of the foil up and seal it to form a parcel.
