Three Cheese Flan with Mustard Pastry

- For the pastry:
- 200g plain flour
- 1 tsp English mustard powder
- 50g butter, diced
- 50g lard or white fat, diced
For the filling:
- 4 egg yolks
- 1 tbsp English mustard powder
- 285ml single cream
- 150ml milk
- 100g mature Cheddar, grated
- 100g Gruyère, grated
- 50g Parmesan, grated
- 1 bunch spring onions, chopped
- salt and freshly ground black pepper
- crisp green salad, to serve

- For the pastry, mix the flour and mustard then rub in butter and fat until the mixture resembles crumbs. Stir in tsp cold water and mix to a firm dough. Alternatively, pulse all the ingredients together in a food processor then add the water and pulse to a firm dough.
- Roll out on a lightly floured surface and use to line a deep cm//in fluted flan tin. Prick the base and chill while you preheat the oven to //gas mark
- To make the filling, whisk the egg yolks, mustard, cream and milk together then stir in remaining ingredients and season.
- Bake the flan case blind for minutes, removing the baking beans after minutes. Reduce the temperature to //gas mark Pour in the filling and cook in the centre of the oven for about minutes until set and golden. Serve warm with a crisp green salad.
