Three Cheese Flan with Mustard Pastry

Ingredients

  • For the pastry:
  • 200g plain flour
  • 1 tsp English mustard powder
  • 50g butter, diced
  • 50g lard or white fat, diced
  • For the filling:

  • 4 egg yolks
  • 1 tbsp English mustard powder
  • 285ml single cream
  • 150ml milk
  • 100g mature Cheddar, grated
  • 100g Gruyère, grated
  • 50g Parmesan, grated
  • 1 bunch spring onions, chopped
  • salt and freshly ground black pepper
  • crisp green salad, to serve

Directions

  1. For the pastry, mix the flour and mustard then rub in butter and fat until the mixture resembles crumbs. Stir in tsp cold water and mix to a firm dough. Alternatively, pulse all the ingredients together in a food processor then add the water and pulse to a firm dough.
  2. Roll out on a lightly floured surface and use to line a deep cm//in fluted flan tin. Prick the base and chill while you preheat the oven to //gas mark
  3. To make the filling, whisk the egg yolks, mustard, cream and milk together then stir in remaining ingredients and season.
  4. Bake the flan case blind for minutes, removing the baking beans after minutes. Reduce the temperature to //gas mark Pour in the filling and cook in the centre of the oven for about minutes until set and golden. Serve warm with a crisp green salad.
