Tiger prawn salad with lime and coriander

- 1x125g pack Tesco Finest New World salad
- 2 tsp groundnut oil
- 2 tsp sesame oil
- 1 red pepper, deseeded and chopped
- 200g (7oz) cooked and peeled tiger prawns
- juice of 1 lime
- 2 tbsp freshly chopped coriander
- salt and freshly ground black pepper
- a few sprigs fresh coriander to garnish

Place the salad in a serving bowl.
Heat the oils in a frying pan, add the pepper and prawns and saute for 3-5 mins. Transfer to a bowl and add the lime juice and coriander. Season, stir well and leave to cool
Place the prawns and dressing over the salad and serve garnished with a few sprigs of fresh coriander.
