Tiger prawn salad with lime and coriander

Ingredients

  • 1x125g pack Tesco Finest New World salad
  • 2 tsp groundnut oil
  • 2 tsp sesame oil
  • 1 red pepper, deseeded and chopped
  • 200g (7oz) cooked and peeled tiger prawns
  • juice of 1 lime
  • 2 tbsp freshly chopped coriander
  • salt and freshly ground black pepper
  • a few sprigs fresh coriander to garnish
Serves: 2 Preparation: 5   Total Time: 5min whats this
 

Directions

  1. Place the salad in a serving bowl.

  2. Heat the oils in a frying pan, add the pepper and prawns and saute for 3-5 mins. Transfer to a bowl and add the lime juice and coriander. Season, stir well and leave to cool

  3. Place the prawns and dressing over the salad and serve garnished with a few sprigs of fresh coriander.
