This British classic is easy to make and satisfying.
 

Ingredients

  • 1 large onion, peeled
  • 500g/1 lb potatoes, peeled
  • 2 tablespoons oil
  • 1 pack/340g Richmond Thin sausages or other sausages
  • BATTER
  • 100g/3 1/2oz plain flour
  • 2 large eggs
  • 300ml/1/2 pint milk
  • GRAVY
  • 1 small onion, peeled, finely chopped
  • Knob of butter
  • 1 rounded tbsp flour
  • 450ml/3/4 pint chicken stock

Directions

  1. Preheat the oven to //gas mark
  2. Cut the onion and potatoes into fairly thin wedges. Mix in the roasting tin with the oil and bake for minutes. Stir well then add the sausages. Bake for another minutes, stirring a couple of times, until the vegetables and sausages are just tender and browning.
  3. Meanwhile, make the batter: beat the flour and eggs with a third of the milk until it is full of bubbles. Stir in the rest of the milk with some seasoning.
