Tomato and butternut squash pasta stars

A tasty tomato sauce enriched with butternut squash and cheese.
 

Ingredients

  • 100g /3 ½ oz butternut squash, peeled and cut into cubes
  • 25g / 1oz mini pasta stars
  • 10g / ¼ oz butter
  • 3 medium tomatoes, skinned, de-seeded and cut into pieces
  • 4 fresh basil leaves, torn into pieces
  • 1 tablespoon crème fraîche or cream

Directions

  1. Steam the squash for 10 minutes, until tender.
  2. Meanwhile, cook the pasta according to packet instructions.
  3. To make the tomato sauce, melt the butter and sauté the tomatoes for 3 minutes, until mushy. Stir in the basil.
  4. Whiz the butternut squash and tomato and basil sauce. Stir in the crème fraîche or cream.
