Tomato, feta and mint salad

This is a delicious, quick and healthy summer salad, even better with English tomatoes in season. Great on it’s own and terrific served on a big platter for sharing.
Ingredients
- 4 large slicing/ beef tomatoes
- 200g block feta
- handful of mint leaves, shredded
- 1 tbsp red wine vinegar
- 3 tbsp extra virgin olive oil
- ½ tsp Dijon mustard
- Salt & Pepper to taste

- Cut the tomato into thick slices and arrange on the plate.
- Crumble the feta and spread on top of the tomato. Sprinkle the mint on top.
- Make the dressing by combining all of the ingredients and dress with a teaspoon. Serve immediately
