Tomato, feta and mint salad

This is a delicious, quick and healthy summer salad, even better with English tomatoes in season. Great on it’s own and terrific served on a big platter for sharing.
 

Ingredients

  • 4 large slicing/ beef tomatoes
  • 200g block feta
  • handful of mint leaves, shredded
  • 1 tbsp red wine vinegar
  • 3 tbsp extra virgin olive oil
  • ½ tsp Dijon mustard
  • Salt & Pepper to taste
Serves: 4 Preparation: 10   Total Time: 10min whats this
 

Directions

  1. Cut the tomato into thick slices and arrange on the plate.
  2. Crumble the feta and spread on top of the tomato. Sprinkle the mint on top.
  3. Make the dressing by combining all of the ingredients and dress with a teaspoon. Serve immediately
