Traditional brown soda bread

Soda bread dates back to approximately 1840, with the traditional cross pattern on the top being said to ward off evil. Others believe it helps the cooking process. Either way, it's very tasty
 

Ingredients

  • 2 lbs brown wholemeal flour
  • 1/2 lb plain white flour
  • 2 flat tsp salt
  • 2 flat tsp bread soda, sieved
  • 1 1/4 - 1 1/2 buttermilk

Directions

  1. Preheat the oven to Gas Mark /.
  2. Combine the flour, salt and bread soda. Make a well in the centre and add most of the buttermilk. Mix with your hand and add more milk if necessary. The dough should be soft but not sticky. Turn out onto a floured board and knead lightly. Shape into two rounds.
  3. Flatten slightly to about inches (m) deep. Put onto a baking sheet. Mark with a deep cross and bake in the oven for minutes, then reduce the heat to C//Gas Mark for about minutes, or until the bread is cooked and sounds hollow when tapped.
