Tropical Scallop Ceviche

- 1 pound sea scallops, trimmed and sliced into 1/3" thick circles
- 1 small red onion, thinly sliced
- ? cup fresh lime juice (3-4 limes)
- ? cup fresh orange juice (1-2 oranges)
- 1 tablespoon chopped chives
- Sea salt, to taste
- Round pepper, to taste
- 1 rip mango, peeled, diced
- ? cup diced avocado

- Combine ingredients and refrigerate hours, stirring once or twice.
- Before serving, add diced mango and avocado. If desired, serve on single romaine leaves garnished with fruit slices.
