Tuna with bashed potatoes and sour cream dressing

Make this light and tasty salad in about 10 minutes.
 

Ingredients

  • 1 560g tin of new potatoes in skins, drained, or fresh new potatoes
  • 1 185g tin of tuna in water, drained and flaked
  • 1 290g tin of sliced button mushrooms, drained, or fresh mushrooms
  • 4 spring onions, chopped
  • 4 tbsp sour cream
  • 2 tbsp chopped chives
  • Freshly ground black pepper
Serves: 4       whats this
 

Directions

  1. Cook the potatoes in boiling water for 5 minutes or until tender. Drain and leave to cool for 5 minutes.
  2. Gently break up the potatoes with a fork (but do not mash).
  3. Place in a bowl and add the tuna, spring onions, mushrooms and green beans. Toss gently and serve on a plate
