Tuna salad with capers, potatoes and green beans

Ingredients

  • 1.5kg/3lb 6oz new potatoes, cut into 1cm/ 1/2in slices

  • 1 tbsp balsamic vinegar
  • 1 tbsp white wine vinegar
  • 4 tbsp extra virgin olive oil
  • 2 tsp Dijon mustard
  • 2 tsp sugar
  • 4 tbsp chopped capers
  • 250g/9oz green beans, trimmed and halved
  • 1 red onion, thinly sliced
  • 1 x 400g can tuna chunks in brine, and drained
  • salt and freshly ground black pepper
  • black olives to garnish (optional)
Serves: 4 Preparation: 30   Total Time: 30min whats this
 

Directions

  1. In a large saucepan, cook the potatoes in boiling water salted water. Drain, then transfer to a large bowl.

  2. Combine the next ingredients to make a dressing and pour over the hot potatoes. Toss gently but thoroughly and set aside to cool.
