Turkey Steaks with Marsala

- 4 tbsp olive oil
- 25g butter
- 1 medium onion, chopped
- 2 quick-cook turkey steaks, each weighing about 450g
- 8 tbsp Marsala
- lemon wedges
- chopped parsley to garnish
- green beans and rosemary potatoes, to serve

- Heat half the oil and butter in a frying pan. Add half the onion. Cook until softened, turn heat to high and add turkey steak. Cook on each side for minutes. Remove, keep warm and cook the next batch.
- Return the first batch to the pan. Add Marsala and bubble until steaks are glazed. Garnish with lemon wedges and chopped parsley, and serve with green beans and rosemary potatoes.
