Veal Schnitzels with Mediterranean Vegetables

A quick and easy supper dish that's healthy, too!
Ingredients
- 1 tbsp olive oil
- 4 Freedom Food veal schnitzels
- 1 large courgette, sliced
- 1 yellow pepper, deseeded and cut into strips
- 1 large beefsteak tomato, cut into 8 pieces and deseeded
- 1 clove garlic, crushed
- 1 tsp freshly chopped basil
- 1 tbsp water
- 2 tbsp balsamic vinegar
- pinch each of salt and ground black pepper
- sautéed potatoes and walnut bread, to serve

- Heat the oil in a griddle pan or frying pan over a medium heat. Cook the schnitzels for minutes on each side. Remove from the pan and keep warm.
- Lay the vegetables in a single layer in the pan, scatter over the garlic and cook for minutes. Turn over, then add the basil, water, balsamic vinegar and seasoning. Cook for a further minutes.
- Serve the schnitzels arranged on top of the griddled vegetables, accompanied with sauted potatoes and walnut bread.
